bitty brownies

maybe i have mentioned it before, but around here we do enjoy a brownie or two. so in the middle of need for a sunday night sugar-fix, we came up with these. let's call them "bitty brownies," so we don't confuse them with the yummies you can buy here, although they are every bit as good. (and did i mention a little healthier too?)

Bitty Brownies
(adapted from The Best Light Recipe)
1/2 cup whole wheat flour
1/2 tsp baking pwder
2 Tbsp Dutch processed cocoa powder
1 Tbsp warm water
1 Tbsp vanilla extract
2 Tbsp butter
3 oz. semisweet chocolate, chopped fine
1/2 cup sugar
1/8 tsp salt
1 lagre egg, lightly beaten
Preheat oven to 350. Lightly grease small muffin tin. Whisk flour, baking powder, and cocoa in small bowl. In separate bowl, whisk water, vanilla, and egg. Melt butter and chocolate in microwave, stirring every 15 seconds until smooth. Add sugar and salt, whisking until smooth. Stir in flour mixture and egg mixture stirring just until smooth. Pour batter into muffin tins. Bake about 10 minutes or until toothpick inserted comes out with just a few crumbs.
