yummy and healthy?



could it actually be possible? a yummy and healthy pizza? i got this idea from my friend, kristen's pizza. only we tried to make it a little healthier and used different ingredients to avoid having to go to the store... we used whole wheat tortillas, 2 tsp. bbq sauce per pizza, about 1.5 oz. mozzarella cheese, grilled chicken, and onions. we grilled the chicken on our little griddle/grill which we love, and tried to use only as much cheese as absolutley needed. so here's the recipe for all you pizza lovers!

BBQ Chicken Pizza
whole wheat tortillas
BBQ sauce
mozzarella cheese
grilled chicken
red onion, chopped
cilantro (fresh or dry)

good idea to use the tortillas. I just found a super cool grocery store in lexington that has an amazing international foods aisle and boy do Paul and I drool over everything that we pass!!!

Andy and I made this the other night and it was SO GOOD!!! We had to substitute a few things and we also added chopped tomatoes. It tasted like California Pizza Kitchen's BBQ chicken pizza. This is definitely a new favorite!

Yum! I've used pita bread for pizzas before, but I never considered tortillas. Thanks for the idea! BBQ chicken pizza is one of my favorites.
